Taste:
Slight salty, tangy and mineral-rich flavour. Similarities to samphire and spinach.
How to use:
- Seafood and fish are the obvious choices, however, Mediterranean-inspired dishes are a lovely match
- Blanched monk’s beard and pasta dishes.
- Use as a bed for fish or seafood.
